View Full Version : spaghetti squash and spinach casserole

I use 1 medium spaghetti squash and it's enough for two meals for 3 of us.

Half the squash and remove the seeds then place cut side down on a plate with a little water and microwave until tender. Usually about 12-15 minutes.

While that's cooking I take a large frying pan and add a couple spoons of olive oil, about 1/2 bag of frozen chopped spinach, a couple mushrooms, and a small onion sliced really thin. I add lots of hot spicy pepper but you can add whatever seasonings you prefer.

Let this simmer until everything is cooking good and then add about a cup of alfredo sauce. We get the 4 cheese flavor but you can substitute cream of chicken/celery/or mushroom as well/ Stir this together and let it simmer while you fork out the pulp from the squash.

Add the squash to the pan and mix well.

Spoon a layer of the mixture in a baking dish and add a layer of shredded cheese, then another layer of mixture until you end up with a layer of cheese on top.

Bake at 320-375 until bubbly and the cheese is browned a bit around the edges. Yummmmmmm! :)

Thank you so much for this helpful tip on making easy spaghetti style squash. Is spaghetti squash better for your diet than actual pasta spaghetti?

Tons better. I cup of regular spaghetti pasta
43.2g carbs
2.5g fiber
8.1g protein

I cup spaghetti squash
10g carbs
2.2g fiber
1g protein

Way less carbs plus they are slower acting carbs so they don't spike your BG like the real pasta.

Those carb numbers are pretty striking! Thank you for this recipe. We like spaghetti squash and I will have to give this one a try soon.
