View Full Version : Chocolate fudge ice cream from pumpkin!

I was experimenting other day and found something I really like.
Take 1 15oz can of plain old pumpkin. (not the sweetened pie filling)
I didn't really measure the ingredients but you can just go by taste until it suits you.
Around 3 tablespoons of cocoa
2-3 tablespoons of splenda or sweetener of choice.
2-3 tablespoons of flaxseed meal (optional)
1 teaspoon of vanilla
Mix with a mixer in a large bowl and add enough whipping cream (I guess regular milk would work too) to get a consistancy like pudding.
Put in a pastry bag or a plastic bag with a corner cut out and squeeze out grape size nuggets on a piece of foil and freeze.
Make a good size bowl and they taste just like fudgesicles to me.
Next batch I'm adding a spoonful or two of peanut butter!:D

What is flaxseed meal and why is it optional and what can you substitute for it?
What did you base your recipe on? I have never heard of anything like this. I'm always experimenting with original recipes to cut the fat and sugar out because of my partner being diabetic.

I found a recipe for something like pumpkin pudding but didn't really care much for it after it was baked. The flaxseed meal is very healthy and has little carbs compared to other meal and flours. I just added a little to give it a rough texture like the real fudgesicles have.
I'm always experimenting with food, sometimes it tuns out good, sometimes :eek: :)

Fudgicle recipe from an old Weight Watchers book
save old soup cans squash them a tad bit flat. Soda cans wrok well too....
In a small pot make a few packets sugar free hot cocoa.
In another bowl mix some low carb chcolate syrup and a bit of milka dn water.
then mix the two.
pour into the cans. When almost rozen and slushy insert popsicle sticks.
Ok so its not great but i think i will try wiht the splenda cocoa.

I don't remember where i found it JD. I think It was from a google search but I didn't save it. It was basicly pumpkin with pumkin pie spices and the added cream to make it thinner and then baked. It just didn't do anything for me at all so I just started dumping stuff together until it tasted good.:)

Okay I'm not getting the part about squashing the soup cans. Am I dense?
Okay the pumpkin pudding original recipe reminds me of a persimmon dish I made a long time ago. It turned out nice and I made it for a friend and he was happpy.

I do this, too, and it's always such a neat feeling when something turns out the way I thought it would or even better. We don't need to talk about the couple of times that it completely flops and I end up with "what WAS I thinking?!" :D

But, that's the fun of cooking :D. You should take a picture of the flops and share them with your kids one day... or just sit back and laugh a few years down the road.

This is what I already do, yes. One of the biggest flops was named (appropriately! hehe) "Shipwreck" It WAS a wreck and I had to throw it out. I didn't think of taking a picture but I'll never forget what it tasted like! :)
I never thought about the picture idea, either! But my husband of 35 years STILL talks about "Hockey-Puck Chicken" and my very first attempt at cooking an entire meal in my brand new microwave, "Cold & Raw Everything" (Who knew you had to increase the time for EACH thing you put in there? - I'd heard that you had to be careful not to OVERCOOK things in this brand new invention, so I kept increasing the time by like 1 minute or less and the darn stuff (3-pound meatloaf, 5 baked potatoes and a whole package of frozen corn) just WOULDN'T get done! 2 hours later we were ready to throw the dinner AND the new-fangled microwave in the garbage!)!!! And let's not even TALK about the first time I made gravy! :mad: (Tasted good, but that particular shade of grey was never intended to go on a dinner plate!) :eek:
I like experimenting, too. (And now I have 2 husbands to try stuff out on, so it can still be pretty crazy over here!) :o

hehe Okay, so now you reminded me of the catfish I tried to make fresh years... many years ago. I didn't know that (shhhhhh, don't give my secret away, it's embarrassing!) a mud cat was different from a regular 'ol' catfish. That thing smelled up the house for DAYS! :)

:D You must mean the pumpkin fudge ice cream recipe... for a second there, I thought you meant my stinky catfish because your response came right after mine about the fish. :D
